How to Store Caviar: Refrigeration, Freezing and Serving 

Refrigeration: The Gold Standard

The best way to store caviar is always in the coldest part of your refrigerator, ideally between 28°F and 32°F. We recommend placing the sealed tin on a bed of ice inside a tightly sealed container. 

Always use a non-metallic spoon, seal the tin tightly after use, and return it to the fridge immediately after serving.

Can You Freeze Caviar?

Wondering whether you can freeze caviar? Technically, yes, but we strongly encourage you not to. Freezing caviar can affect the texture, causing eggs to rupture upon thawing. However, if absolutely necessary, caviar may be frozen in an airtight, vacuum-sealed container. For best results, thaw it slowly in the refrigerator for 24 hours before use.

Freezing works best for pasteurized caviar, but for fresh options like our caviar, the texture is too delicate to handle temperature shifts without compromise.

Serving Your Caviar

How long can you keep caviar in the freezer or fridge? When stored properly and unopened, our caviar can last up to 4 weeks in the fridge. Unopened caviar can stay in your freezer for up to a year, but once opened, it should not remain there for more than a week. For peak quality, caviar should be consumed within 24 to 48 hours. We recommend not freezing high-quality caviar. 

Once served, caviar should never be left out for more than 30 minutes at room temperature. It’s highly perishable and sensitive to oxygen and heat. If you're serving it over a longer course, keep your tin on crushed ice and replenish the cold source regularly.

This is especially important for caviars like Ossetra, which rely on subtle balance and mouthfeel. Improper storage dulls those nuances.
