Astrea is the name of the Greek goddess of purity and precision, which are the qualities we strive for when sourcing our caviar. Our founders, Reisa and Eve, bring a wealth of expertise to the creation of Astrea Caviar. Reisa, the owner of China’s premier vineyard in Ningxia and a Master of Wine candidate, and Eve, with over 15 years of experience in the hospitality industry and a wine collector, share a deep passion for exceptional culinary experiences and a commitment to excellence. Astrea Caviar is the result of their tireless pursuit of exquisite taste and quality.
Both founders set high standards, sourcing directly from certified green farms. Through partnerships with multiple farms, Astrea selects custom private batches that meet their exacting standards. As wine connoisseurs, Reisa and Eve understand the complexity and elegance of fine wine, applying this same philosophy to caviar.
At Astrea, we believe that caviar should be fun and effortless while still embodying chic luxury. Our goal is to offer an experience where caviar is not confined to fine dining but seamlessly integrates into your everyday lifestyle.
We specifically select sturgeon aged between 10 and 25 years, then age the caviar roe to develop deep umami and complex flavors. Our sturgeon are raised in sustainable environments, nourished with quality mountain spring or lake water and we wait until the third reproductive cycle to harvest the eggs, ensuring the highest quality for Astrea Caviar. No antibiotics or preservatives are used in the raising of sturgeon or caviar.
Before extraction, we transfer the fish into low-temperature fish ponds with controlled conditions of 8% salt content and a temperature of 40-45 degrees Fahrenheit. There they reside for two months to mimic deep sea conditions. Once extracted, the eggs are cleaned and cured before going through an extended aging period of one to four months. To enhance umami and flavor complexity, our salt content is meticulously applied for a balanced flavor profile
